Tough cuts of beef have are tough because of the abundance of connective tissue. When the roast is cooked “low and slow” – on a low temperature, for an extended period of time – these tissues soften and slowly become the tender, melt-in-your-mouth roast meat we all love.
Cut from the shoulder just above the short rib, boneless chuck roast is our top recommendation for pot roast. It has outstanding marbling, making the roast tender and juicy when braised.
